So I was diagnosed with diabetes in January of 2009. and I must admit i knew i was at risk, but didnt take care of myself.
type 2 diabetes is a scary diagnosis! being overweight was my first inkling, then my doctor was asking questions about pre-diabetes symptoms. i knew that i was borderline prediabetic from the age of 16. and by the age of 19 i was diabetic. it's scary, not knowing what you can eat. popular media makes sugar the enemy. and so did I. i basically panicked and started eating more healthy foods.
But that can be farther from the truth.
All sugars are carbohydrates, and like there are different sugars, there are different kinds of carbs.
Simple carbohydrates, found in processed breads and sugary snacks, are the most common because they are the most marketed!
Complex Carbs, found in whole or multigrain products are the ones i should have been looking at. Foods rich in slowly digested carbs and fiber!
heres a trick i learned, my favourite snack on long retreats is SunChips and Hummus!
(a food ive grown attached to in college)
In a 100 calorie pack of sunchips there is 12g of carbs, and less than 1 g fiber
barely any fiber, i know.
well, if you add in the carbs from the hummus, about 1/4 cup, you have 16 carbs
now subtract the total fiber from the total carbs
16g Carbs-2g Fiber= WOW...14g Carbs!
and if ~15g carbs is a single carb serving youve got a well balanced snack!
and how about some snap peas and carrots instead!
another thing i learned is that i can enjoy the same foods as before, as long as i fit them into my carb counting plan. that means i can eat foods like sushi and chilli with corn bread! but substitute some of the sugar for splenda or meat for high fiber veggies.
